A fresh wind blows through the kitchen: Bergamo native Paolo Cortinovis, whose impressive credentials include international experience and a previous tenure here, now works alongside Beatrice Arrigoni, who carries on her family’s culinary legacy under her father Stefano’s guidance. Available as both a tasting menu and à la carte, the offerings are broad and dynamic. The cuisine draws from Italy’s varied regional traditions before venturing into more contemporary territory, alternating effortlessly between fish and meat.
