This chef is breathing fresh life into the yakitori scene. His originality lies in adapting the poultry dishes he specialised in during his apprenticeship into yakitori. In place of traditional dipping sauces, he pairs his chicken dishes with French sauces, with red wine, Madeira or Américaine sauces chosen to suit each type of skewer. Familiar yakitori, reimagined with a modern, innovative touch.
