South of Perpignan, this contemporary restaurant is on the upper floor of an old building with exposed stone and brick walls. A multi-course single set menu is served at a horseshoe-shaped counter that opens onto the kitchen. Chef Julien Hermida – whose impressive culinary journey includes a stint in Asia working alongside Paul Pairet – delivers authentic modern cuisine that showcases carefully prepared seasonal ingredients. On the evening of our visit: peas with just a little bite, Bayonne ham and roasted hazelnuts to start, followed by medium rare fillet of veal, with aromatic basil and a delicate shallot tartlet.
