Le Suquet perches on the Aubrac plateau near Laguiole, where Sébastien Bras operates the two-Michelin-starred restaurant his father Michel founded. The building, all stone and glass, frames views across pastureland reaching to the horizon. Thirteen rooms, designed by Jérôme Saysset, comprise floor-to-ceiling windows opening onto gardens or meadows. The architecture echoes the buron, traditional shepherd's huts built from local stone. A path lined with native shrubs connects the rooms, mimicking the draille trails used during transhumance. Bras's cooking centers on what grows wild on the plateau, delivered with a clarity that feels almost philosophical.
