In their establishment, which also has a few guestrooms, Koen and Laurence immediately put you at ease by the warmth of their welcome. Skill, tranquillity and pleasure are the watchwords in the open-plan kitchen. While the chef clearly draws on his traditional background, he is far from averse to adding a modern spin to a patriotic lineup. For example, he may coat glazed langoustine with melted lardo, which is then paired with velvety risotto and a knockout gravy. Rather than showy gimmicks, the focus is on made-to-order preparations and authentic flavours in a bid to further embellish first-rate produce.
