On a street running parallel to the celebrated Via Vittorio Veneto, Kohaku brings the elegance of Japanese kaiseki cuisine – the country’s haute gastronomy – to the capital. The menu offers a broad range of classic and traditional dishes, with quality at its heart: impeccable ingredients, precise knife work and carefully composed presentations. The freshness of the fish is evident in the many raw dishes, among which – according to the Inspector – the scallop and amberjack tartare stands out, mixed with cubes of avocado and dressed with a delicious ponzu sauce and sesame oil. The meats, too, are of notable quality. Depending on personal taste, guests may choose the celebrated gyoza dumplings, tempura, noodles or the many charcoal-grilled preparations, to name only part of the offering. For those seeking total immersion, the “Kohaku kaiseki” tasting menu is also available at dinner: an eight-course itinerary dedicated to lovers of great Japanese cuisine.
