In the centre of Vinci, the town where Leonardo was born – a visit to the museum dedicated to him is recommended – stands this restaurant with a considered and minimalist atmosphere. The dining room, spare yet welcoming, deliberately allows attention to fall upon the cooking, presented through a single tasting menu in continuous evolution, shaped by the creative instinct of the chef. The recipes display sound technique, measured imagination and a delicate touch in both presentation and the balance of flavours. Our Inspector was particularly taken with the risotto with raw cuttlefish, marinated in lemon and dressed with its ink, finished with rapini and chicory: a meticulous dish of great pleasure. On the days when the fine dining Atman is closed, the adjacent bistrot Ultroneo offers solid and carefully considered cooking, closer to the Tuscan tradition and equally satisfying.
