The chef, whose résumé includes several of the city’s top sushi counters, oversees an intimate experience centered on pristine seafood and careful technique. Guests can choose between nightly omakase seatings or opt for the more accessible lunch format, though the counter remains the ideal perch for appreciating the progression.
