Carelshaven has been providing comfortable overnight accommodation since 1772. This elegant restaurant is located on the splendid Twickel Castle estate, and its leafy terrace overlooks the grounds. The chef tends his on-site kitchen garden, incorporating its bounty into fine French dishes that are plant-forward and include influences from around the globe. By enriching his duck jus with mole, he imbues duck breast with spicy-sweet nuances; textures of kumquat give the sweetbreads an exquisite twist – each plate is full of surprises.
