French cuisine with a healthy dollop of Japanese influence, by a chef well versed in Japanese cuisine. Soup of locally raised chicken uses chicken dashi stock with char-grilled chicken thigh meat, prepared with Japanese techniques and scented with vermouth for a French sensibility. ‘Jfree’ means ‘free’ as in ‘free expression’. Prix fixe offerings centre on the bounty of Miyazaki Prefecture, dovetailing the chef’s love of good ingredients with his love of his homeland.
