Nicolas Tournay welcomes diners into his inviting neighbourhood eatery, which sports a warm, homespun feel. The chef crafts a score that is both creative and distinctive with produce from local farmers, as he draws his inspiration from both local traditions and Southern Asian cuisines. For example, he may mix glazed scallops with Chinese artichoke and salsifies cooked al dente in butter, a miso-flavoured beurre blanc and a coulis of spinach. Spontaneous, unencumbered cuisine, oozing in flavour.
