Sequestered away in a corner of the Virgin Hotel, this exclusive experience comes courtesy of Chef Juan Manuel Barrientos, whose culinary footprint crosses states and countries. Large tables clad in white tablecloths and surrounded by floor-to-ceiling glass set the stage for a modern tasting that pulls inspiration from Latin America and, more specifically, Colombia. A meal here is redolent of the tropics. The "tree of life” bread, the chocolate experience and an ornate coffee ceremony are signatures intertwined with courses like a shio koji-marinated duck sauced with a sabayon of honey and passion fruit.
