The restaurant was relocated here for sentimental reasons: the chef had chosen this location to study sushi on his days off. The omakase menu is a judicious balance of sushi and snacks. Drawing on his expertise in other disciplines of Japanese cuisine, the chef serves traditional sushi-shop snacks as well as other flavours such as baked goma tofu, made with ground sesame paste. In search of the perfect match of sushi rice and toppings, the chef is constantly tinkering.
