The cooking blends traditional references with contemporary techniques and occasional Cajun influences, resulting in dishes that are creative without feeling overly formal. Water fern rice cakes layered with caramelized king trumpet mushrooms and ginger oil offer comforting flavors, while fried quail stuffed with duck sausage arrives over Viet-Cajun tomato rice with bright clementine mustard. Desserts lean similarly playful, as in a delicately handled durian mousse paired with passionfruit granita, white chocolate streusel and dill oil.
