The chef layers Japanese elements over French cuisine. Insisting on only the finest Japan-grown ingredients in season, he uses kombu dashi and soy sauce as subtle accents of flavour. The chef values knowing the people behind his produce, and deepens his ties with them, while crockery and cutlery are specially commissioned from artisans. The restaurant name is French for ‘memories’, reflecting the chef’s desire to make it a place that recalls the happiness of chatting contently around a dining table.
