Within the walls of Castello di Magliano Alfieri – a place suspended in time, with a magnificent frescoed hall and soaring ceilings overlooking the hills of Langhe and Roero – chef Paganini’s cuisine takes shape, deftly balancing local tradition and innovation. Two main offerings are available: the traditional menu, “Viaggio in Piemonte (Journey Through Piedmont),” and the “A Occhi Chiusi (Eyes Closed)” menu, customizable in three, four, or five courses according to guests’ preferences. It is in this latter menu that the chef gives full rein to his creativity, crafting bespoke dishes and personalized interpretations designed to make every experience unique.
