A few steps from Piazza del Popolo, a 17th-century palazzo houses the Romeo hotel and, within it, the restaurant bearing the name of the world’s most-starred chef. The dining room – like the entire hotel, designed by Zaha Hadid – is a triumph of precious materials: ebony on the walls, marble for the open kitchen, an aesthetic that unites luxury, exclusivity and futuristic lines in every detail. Leading the kitchen is a young chef who honed his technique in the kitchens of Alain Ducasse, between Monaco and Paris. Here he selects ingredients of great quality and works them into compositions that are never complicated, characterised by clear, readable flavours, often punctuated by Mediterranean accents. Cooking that finds its most convincing expression in the elegance of the raw materials and the precision of the cooking, perfectly in harmony with the striking surroundings.
