Behind an attractive façade of historic wooden frames and glass, Tanguy Laviale rolls out a laid-back, down-to-earth version of his fine dining establishment, Ressources. Forthright recipes that never fail to hit the spot, sampled in blind tasting menus unveiled over several courses. The 1 000-strong wine bin, which unveils a penchant for natural wines, is the inspired work of sommelier Maxime Courvoisier.
