The concept of chef Luiz Filipe Souza, which successfully fuses Brazilian and Italian influences, yields dishes that are not only visually stunning but also brimming with skill, knowledge, and balance — it is remarkable how the chef manipulates temperatures as though they were simply another texture. The offering takes the form of a single tasting menu called Oriundi — a symbol of cultural exchange — beginning with delicate starters inspired by the colours of the Brazilian and Italian flags, before moving on to exquisite dishes such as the Moqueca branca, a refined white version of the classic Brazilian fish stew made with squid and pupunha palm heart, and the Bomba de vieira, a scallop creation that is a permanent fixture on the menu yet reinvents itself with every new edition.
