Amandine Chaignot's new culinary realm is in the heart of her beloved Perche province – in a village inn with a warm atmosphere and its original soul intact, courtesy of stonework and exposed beams... but there are also some more modern elements such as steel and unfinished concrete. They have found room to install two restaurants: both a bistro and a restaurant that aspires to the heights of fine dining. In both cases, the set menus shine a light on local producers, farmers and suppliers, and are inspired by nature and the riches of the terroir.
