There are only eight stools lined up against a stainless-steel counter at this spot, located on the second floor of the Mercardo Alcalde, so you should expect a bit of a wait. It's worth your time, though, as this laidback eatery has perfected the art of birria, with three generations honing their craft over the last 60 years. Today, the son and grandson of the founder share their skills with diners who choose between a small or large plate as well as a choice of cuts (surtida or carnaza). It's slightly different here than what you may expect, as the meat is left in pieces, but it has that perfect blend of a crispy, golden-brown exterior with moist, tender meat. To top it off, you'll get a pour of their birria consommé, as well as some warmed tortillas.
