The white shape on the noren represents the ‘tai no tai’, the small fish-shaped bone found at the base of the pectoral fin of a ‘tai’ or sea bream, cherished in Japan as a lucky charm. Counter service puts the skills of the chef, a veteran of kappo cuisine, on full display. The menu is filled with items learned during his apprenticeship; at times it may be possible to order a personal favourite. The sight of both first-timers and regulars enjoying themselves to their hearts’ content will make you want to keep coming back.
