"While the short supply chains we use guarantee that we work with the best local and seasonal produce, our ambition is also reflected in every aspect of our cuisine. Farming and fishing methods are crucial in the selection of our meat and fish, but we are also reducing the importance given to protein in our menu. Recycling is pushed to the maximum, packaging now excludes plastic and food waste is given to the animals."
