The Hunanese owner sources the best ingredients and condiments from the mountains of his home province to ensure authenticity. Pickled chillies, dried bamboo shoots and smoked cured meats impart unique flavours and aromas. Spicy and savoury, the steamed marble goby with pickled chilli boasts fine, delicate flesh. Assorted preserved meats (pork, sausage and fish) steamed with fermented black beans and dried chillies have an exceptional smoky quality.
