Sister property to Le Clos de Sens in Annecy, Le Clos Vauban makes its home on the ramparts of Langres, birthplace of Diderot and the largest remaining fortified city in Europe. It’s the work of the same pair — Chef Laurent Petit, a Haute-Marne native, and his wife Martine — whose gift for hospitality expresses itself with equal strength at the table and in the accommodations. The rooms and suites marry antique elegance with surprising and tasteful contemporary design decisions, and the restaurants, the gastronomic Bulle d’Osier and the less formal Mirabelle, are key to the experience.
