The chef, who hails from Niigata, Japan, reinterprets flavours from his home prefecture using first-rate local ingredients, such as root vegetables in a flavourful stew known as noppe. À la carte is available, but the omakase is where the magic lies. Try Das burger – a deep-fried patty of varying ingredients ranging from ground beef to sashimi in a house-made bun.
