The most luxurious menu leans into ceremonial abundance, featuring double-boiled superior shark’s fin soup with chicken, braised five-head South African dried greenlip abalone in oyster sauce and Australian lobster baked with dried fish, before finishing with fish maw egg noodles and double-boiled hashima (snow jelly) with lotus seed. The mid-range and modest menus echo this sense of occasion with variations on shark’s fin, Teochew-style marinated platters, steamed Soon Hock, sautéed scallops and braised fresh abalone with sea cucumber, concluding with glutinous rice, nian gao and traditional sweet soups that bring the celebration to a comforting close.

Also not to be missed: handmade Blessings Pockets (S$36++) cradling shiitake mushrooms, crunchy water chestnuts and a sprinkling of coriander in a mildly sweet loofah gravy, as well as the Harmony of Nature (S$28++), which features chewy makhana (fox nuts, prized for their superb mix of antioxidants, protein and fiber) against a backdrop of lotus roots, sweet peas and a house-made vegetarian-friendly XO sauce.
