In the kitchen of this converted stable that oozes rustic cachet with its beams, fireplace and exposed brick walls, the chef cooks up generous traditional fare: house-made foie gras terrine accompanied by a seasonal compote, pan-fried red mullet served with grated fennel and a fish stock jus, and calf sweetbreads sautéed in beurre de Bresse.
