This restaurant, which describes itself as “freestyle with a Japanese soul” is located just a few minutes from Salamanca’s historic centre. The cuisine here is uncompromisingly focused on a fusion of Japanese techniques, international recipes, and Mediterranean flavours. Chef Taigoro Suzuki, who trained in Madrid but has experience working in kitchens in Bangkok and Tokyo, creates bold dishes but which feature a harmony of flavours and ingredients and impressive presentation. These are presented as part of a tasting menu that changes in line with the seasonal availability.
