The menu is thoroughly French, with a few signature flourishes by Sidney Schutte evident in a handful of international dishes, but also in the depth of the chicken velouté with aromatic truffle or the rich butter sauce with capers and the veal jus that lends power and punch to flawlessly cooked skate fillet.
