Named after the chef’s parents, Fon-Cé captures the varied culinary landscapes of LATAM with passion and delicacy. Inspired by buñuelo, a fried dough fritter enjoyed throughout the continent, the chickpea with chicken liver pâté and caramelised coconut sauce stands out with a bold, flavourful twist.
