Pajtim Bajrami makes no bones about his love of produce, as the top-drawer scallops, wagyu beef and other delicacies quickly demonstrate. His Anjou pigeon is a perfect example: he first cooks the breasts rare before adding a high-flying felicitous blend of foie gras and truffles.
