Urban and exciting, Elders is just the ticket if you fancy sampling modern cuisine in which veggies play the star roles. Tom Pauwelyn reverently respects the seasons, inventing inspired recipes. For example, he exalts cauliflower by preparing it in several ways, including one with an exquisitely subtle Nantua (creamy crayfish) sauce or he celebrates pears with a sabayon of stout beer. Each meal is a treasure trove of discoveries.
